Dill Tofu Salad

I love this salad as a wrap with lettuce and tomato, in a tortilla or as a dip with crackers! Happy healthy summertime snacking!


1 pkg firm tofu, steamed and cooled completely and mashed with fork
1/3 cup onion, minced fine
1/2 cup celery, diced
4 dill pickles, diced
1 Tbs umeboshi vinegar
2 Tbs fresh dill, minced
3 Tbs Vegenaise
1/4 tsp ground mustard
1/4 tsp tumeric
1 Tbs yellow mustard


In large bowl, combine all ingredients and mix well.
Serve on crackers, in tortillas, on bread, or just as is.
Refrigerate unused portion.
