Cucumber Seaweed Salad with Noodles & Sesame Dressing
I have mentioned in a several posts about the health benefits of sea vegetables, also known as “sea greens” although most people refer to them as “seaweed”.
The thought of eating sea vegetables does not appeal to a most people but this particular recipe just might change their mind. And all the nutrients they’ll be getting thanks to your culinary skills and knowledge…Yes, you are true hero!
1/2 cup arame (sea vegetable)
2 cups water
8 oz udon noodles
1 small cucumber, diced and not peeled
4 radishes, matchstick
1 cup apple juice, optional
4 Tbs tahini
1/2 onion, minced
1/2 tsp umeboshi paste
splash of shoyu or soy sauce
juice of one lime
2 tsp brown rice syrup
1/2-3/4 cups water
Rinse and drain arame.
Boil arame in 2 cups of water over low flame for about 10 minutes.
(you may use apple juice instead of water for a sweeter flavor).
Add shoyu and cook 3 minutes.
Drain any remaining liquid.
Let cool and place in serving bowl.
Cook noodles separate and add them with cucumber and radishes to serving bowl.
Mix all ingredients together for dressing and stir into bowl with other ingredients. Gently toss all together and enjoy!
