Holiday Berry Crumble

This delightful recipe can be prepared with any type of berries. Served as is, or warm with Vanilla Non-Dairy Ice Cream, it pleases even the most demanding taste buds and dessert cravings. It’s also 100% vegan and macrobiotic! Simply fantastic!

INGREDIENTS

CRUMBLE BOTTOM & TOPPING

2 cups whole wheat pastry flour
1/2 cup maple sugar
1 tsp finely shredded lemon peel
pinch sea salt
1/2 cup Earth Balance, butter substitute
splash rice or almond milk

BERRY FILLING

5 cups of your favorite berries, washed and dried well (stems removed and sliced if using strawberries)
2 Tbs lemon juice
3/4 cup maple sugar
pinch sea salt
1/4 cup whole wheat pastry flour

PREPARATION

Preheat oven to 350°
In a large bowl, combine all ingredients for the crumble mixture. Cut in butter and mix well with your hands. Set aside 1 cup.
In a large bowl, combine all ingredients for berry mixture.
In a large baking pan or spring form pan, press all of the crumble mixture except for the one cup into the bottom. Pour berry mixture on top of crumble and top with remaining crumble topping.  Bake for 45-50 minutes.
