Apple Crisp

This Autumn favorite reminds me of my childhood; playing outside all day and finally as the night falls being lured back home by the sweet smell of warm apple crips.

Hope it brings back the old memories for you, as well and creates wonderful new ones.

FILLING

5 apples, peeled, cored and diced (preferably not Granny Smith)
3/4 cup maple sugar
2 Tbs unbleached white flour
1/2 tsp cinnamon
1/4 tsp sea salt
1 tsp vanilla extract
1/4 cup water

CRUMB TOPPING

1 cup rolled oats
1 cup toasted walnuts, chopped (toast approx 10 minutes)
1/2 cup whole wheat flour
1/2 cup Earth Balance
1/4 cup maple sugar
1 tsp cinnamon
1/4 tsp allspice
1/4 tsp nutmeg
1/4 tsp sea salt

PREPARATION

Preheat oven to 375 degrees.
In mixing bowl, combine all ingredients for filling and set aside.
In separate bowl, combine all ingredients for topping and set aside.
In ungreased, 8″ square cooking dish, place filling in dish and sprinkle with crumb topping. Bake for 35-45 minutes and let cool slightly before serving. Perhaps some vanilla Rice Cream to top off? Delicious!
