Holiday Berry Crisp

A perfect addition to your holiday table!

INGREDIENTS

4 cups boysenberries or blackberries
1/4 cup maple sugar
1 1/2 Tbs arrowroot
1 1/2 tsp water

Topping
1 cup rolled oats
1/3 cup maple sugar
1 cup chopped pecans, toasted
1/2 cup unbleached white flour
1/4 tsp sea salt
1 tsp cinnamon
1/2 cup Earth Balance butter substitute
1 Tbs maple syrup

PREPARATION

Preheat oven to 375 degrees.
In medium size pot over medium, add berries, maple sugar, arrowroot, and water.
Cook until the berries start to release their juices about 10 minutes, stirring occasionally.
Turn flame to low and continue cooking another 10 minutes, keeping berries in tact as much as possible.
Turn into 8 x 8 cooking pan or ceramic loaf pan.
In small bowl, combine dry ingredients.
Using a butter knife, cut Earth balance into mixture and add syrup.
Mix well, with hands if needed.
Sprinkle over berry mixture and bake until bubbling, about 25 minutes.
Let stand a few minutes and serve warm.

**Serve with vanilla soy or rice cream.
