Brittany’s Spanish Rice

Try this recipe with Vegan Refried Black Beans, Enchiladas, or Chipotle Potato and Black Bean Tacos for a fantastic meal!

SERVES 4-5

INGREDIENTS

1 cup cooked brown rice
1/2 yellow onion, diced
1/2 red bell pepper, diced
1/2 jalapeno, seeded & minced
2 cloves garlic, minced
4 tomatoes, diced
1/2 carrot, diced
2 Tbs olive oil
1 tsp cumin
sea salt (to taste)
pepper (to taste)

PREPARATION

Saute onion for 5 minutes, until tender, add garlic, carrots, jalapeno, and bell pepper and cook for 6 minutes. Add tomatoes, cumin, sea salt, and pepper. Cook water out of the tomatoes, approx 10 minutes. Add cooked rice and mix well. Serve hot.
