Brown Rice Pudding
Wholesome and delicious, just the way grandma used to make it, this classic desert is now even healthier with all vegan ingredients.

2 cups cooked short grain brown rice
3/4 cup vanilla soymilk
1/2 cup maple syrup
pinch of sea salt
1/2 tsp cinnamon
2 Tbs raisins
*1/2 Tbs agar agar flakes (found in the seaweed aisle. I use “Eden” brand)
1/2 package fresh strawberries, sliced
1/2 package blueberries
In small bowl, combine agar agar and half of the soymilk and set aside for 10 minutes.
In medium pot, over medium flame, combine all other ingredients except for berries.
Mix well and cook 5 minutes.
Add agar agar and soymilk and mix well.
Cook 5 more minutes.
Pour into bowl and let cool completely.
Garnish with berries and enjoy!
* agar agar is a tasteless sea vegetable that is the alternative to gelatin.
