Ultimate Chocolate Chip Cookies
Today is the National Chocolate Chip Cookie Day and we have a perfect contender! These ultimate chocolate chip cookies, are made with sugar-free, dairy-free and egg-free ingredients.
How’s that for being awesome! Hey, “Chips Ahoy!” – eat your heart out!
1 3/4 cups spelt flour
1 1/3 cups oat flour
3/4 cup brown rice flour
1/2 tsp baking soda
1/2 cup maple syrup
1/3 cup sunflower oil
3 Tbs brown rice syrup
2 Tbs oat milk
1 1/2 tsp vanilla extract
1/2 tsp sea salt
1 1/2 cups grain sweetened chocolate chips ( I use Sunspire)
3/4 cup walnuts
Preheat oven to 375 degrees.
Prepare baking sheet with parchment paper.
Mix all dry ingredients together except for chocolate chips and walnuts.
In separate bowl, whisk together maple syrup, sunflower oil, rice syrup, oat milk, and vanilla.
Add flour mixture a little at a time and slowly fold in chocolate chips and walnuts.
Using a large spoon, divide the dough into 1/4 cup size cookies and place onto baking sheets.
Bake for approx 15-20 minutes.
