Holiday Gingersnaps

Welcome your guests with these favorite healthy holiday cookies!


2 cups unbleached white flour
1/2 cup maple sugar
1/2 cup maple syrup
1/4 cup non-dairy, unsweetened cocoa powder
3/4 cup Earth Balance butter substitute
2 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
3/4 tsp cloves
1/4 tsp cardamom
1/4 cup raisins (optional)


Preheat oven to 350 degrees.
Combine all dry ingredients and mix well.
Add Earth Balance and mix well using your hands to absorb all of the dry ingredients.
Gently mix in raisins.

Line baking sheets with parchment paper.
Using a heaping Tbs or melon baller, scoop the dough and place onto baking sheet, gently press with the heel of your hand to allow the dough to spread.
Place cookies 1 inch apart and bake for 15 minutes.
