Homemade Almond Milk
Who knew that something so delicious is also good for you? Almonds improve lung and intestine functions as well as increase brain activity.
2 Tbs coconut oil
1 cup raw almonds, blanched and soaked over night
3 cups ice cubes
2 1/2 cups water
1/4 cup maple syrup
1 tsp vanilla extract
1/4 tsp sea salt
Put the coconut oil in a small glass container.
Fill a larger bowl about 3/4 full with hot water.
Float the container of coconut oil in the container of hot water until the coconut oil melts and becomes liquid.
Put all other ingredients in a blender and blend at the highest speed until completely blended and slowly add coconut oil in a steady stream until mixed thoroughly.
Serve cold and refrigerate remaining unused portion.
**for Chocolate-Almond Milk simply add 3-4 tsp chocolate powder or nibs and additional 1-2 Tbs maple syrup, and blend well.
