Vegan Pumpkin Cheesecake Bars
To get you in the Halloween mood here is a wonderfully delicious pumpkin dessert! Oh, and don’t worry, there is nothing scary in it.
1/2 cup rolled oats
3/4 cup chopped pecans
1/2 cup unbleached white flour
1/2 cup Earth Balance
1/3 cup maple sugar
8 oz vegan cream cheese (I use Follow Your Heart)
3/4 cup maple sugar
1/2 cup canned pumpkin
1/3 pkg Silken firm tofu (not in refrigerator section)
1 1/2 tsp cinnamon
1 tsp allspice
1 tsp vanilla
Preheat oven to 350 degrees.
Combine flour, oats, and maple sugar. Cut in Earth Balance and stir in pecans.
Set aside 1 cup mixture for topping.
Press remaining mixture into bottom of 8 x 8 baking dish and bake for 15 minutes. Let cool slightly.
In separate bowl, combine pumpkin, cream cheese, maple sugar, tofu, cinnamon, all spice, and vanilla. Mix well until smooth. Pour over baked crust and sprinkle with topping. Bake for 30-35 minutes. Cool before cutting. Enjoy!
