Outstanding Banana Coconut Pancakes
For a wonderfully fabulous breakfast, brunch or even lunch try these outstanding vegan, sugar-free pancakes! Holiday season favorite in my book!
1 cup whole wheat pastry flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp sea salt
1/2 mashed banana
1 Tbs maple sugar
3/4 cup coconut milk
1/2 tsp cinnamon
1/2 tsp vanilla extract
Earth Balance for cooking
maple syrup to top
Mix flour, baking soda, baking powder, cinnamon and sea salt in a medium sized bowl.
In a small bowl, mix mashed bananas, maple sugar, coconut milk, and vanilla.
Combine the two mixtures until well blended. If batter is too thick, add more coconut milk or water.
Heat small amount of Earth Balance in a small skillet and pour batter into heated skillet.
Let pancake cook until the edges are bubbly and underside is brown.
Flip and cook until cooked all the way through.
Serve hot with maple syrup!
