Benefits of Spring Greens: Dandelion

Since Spring is the time for renewal and liver function, I thought I would share a little about the benefits of dandelion greens.

I love these greens because they are so easy to add to soups or salads and the health benefits are outstanding, and why wouldn’t you want to help your liver out?

Although they can be a little bitter, adding dandelion greens at the end of cooking a soup (I add them when I turn the flame off),  really helps tame any bitterness. But if you choose to add them to a salad with other fresh greens and herbs you may experience a cool, slightly sweet flavor.

Dandelion greens help to clear heat, detoxify, have anti-tumor effects, benefits liver function, promotes the flow of bile, and is a diuretic.
