Holiday Caffè Mocha

A delicious addition to your holiday breakfast or brunch, this fabulous mocha will surely please all! Accompanied by Coconut Banana Pancakes, makes everyday a festive occasion!

INGREDIENTS

4 Tbs grain coffee
3 cups rice milk
1/2 cup soy milk
1/2 cup original amazake (fermented rice drink available at most health food stores)
1 pinch sea salt
4 tsp rice syrup
1 Tbs cocoa powder
maple sugar or syrup, to taste

PREPARATION

In medium pot, over low flame, bring all ingredients except for grain coffee, to a gentle boil.
Dilute grain coffee in equal parts water to dissolve.
Add to pot, stirring gently.
Let simmer 1 minute and serve hot.

  1. This looks and sounds delicious! Is there a special reason for using grain coffee? Would espresso work?

      Thank you for your inquiry. Of course espresso would be fine. My reason for grain coffee is that there is no caffeine or chemicals. But if espresso is what you love, and I certainly can see why, absolutely 🙂 Enjoy!
