Blood Strengthening Kinpira Soup

Kinpira soup is a classic macrobiotic dish typically prescribed for strengthening the quality of blood. Feel the cells of your body rejuvenate with each bite. Here is to your health!

INGREDIENTS

1 carrot, matchstick
4″ burdock root, matchstick
1/3 onion, diced
1/2 cup kabocha squash, diced
2 slices lotus root, optional
2 cups water
2 tsp barley miso, dissolved in small dish with water
1 Tbs sesame oil

PREPARATION

Heat oil over medium flame in small stock pot. Saute burdock for 5 minutes. layer carrots and lotus (if using lotus) on top of burdock. Cover vegetables with water and simmer for approx 20 minutes until soft. Adding water if needed. Add onion and squash and simmer for 10 minutes. Add water and miso and simmer for 3 minutes.
