Margie’s Heavenly Lentil Soup

This lite, nourishing soup is refreshing anytime of the year and wonderfully compliments other dishes. Try it with our Vegan Country Cornbread for a simple, yet deliciously satisfying meal.


2 Tbsp olive oil
1 large carrot, sliced
1/2 cup onion, diced
4 cloves garlic, minced
2 Tbsp tomato paste
1 cup green or brown lentils
1 Tbsp fresh Thyme
2 Tbsp Shoyu or soy sauce
1 Tbsp Dijon mustard
sea salt & pepper, to taste
4-6 cups water


Heat olive oil in a medium sized saucepan.
Sauté onion until translucent, add garlic, carrots and sauté for another 2 minutes.
Add tomato paste, lentils, and thyme stirring frequently.
Add water and bring to a boil.
Cover & reduce heat.
Simmer for 30 minutes or until lentils are soft.
Remove from heat and stir in soy sauce, mustard, salt & pepper.
