Virgined Scalloped Potatoes

Thanksgiving is just around the corner! Here is a delicious potato dish to get you in the festive mood.

As always, it’s made without dairy, eggs, meat or simple sugars. Now you can feast on this holiday classic anytime, guilt free!



2 Tbs olive oil
1/2 cup Earth Balance butter substitute, melted
10 red potatoes, peeled and cut into 1/8″ slices (ends removed)
sea salt
black pepper


Preheat oven to 400 degrees. Coat 9″ pie pan with olive oil. Place a potato slice in center of pan and overlap slices in circles around bottom of pan until the bottom is completely covered. Drizzle with a little Earth Balance and small amount of salt and pepper. Repeat for second layer starting in the center as above, until all potato slices are used. Drizzle any remaining Earth balance over top. Cover with foil and bake for 25 minutes. Uncover and continue baking for another 30 minutes. Serve hot.
