Flavorful Roasted Veggies
This delicious recipe is yet another fun and easy way to get your veggie fix. Just a few more weekends left for summertime grilling!
4 Tbsp olive oil
1 head of broccoli, cut into florets
1 head of cauliflower, cut into florets
1 handful of greenbeans, stems removed
1-2 cloves garlic, minced
1 Tbs fresh rosemary
1 Tbs fresh basil
dash of sea salt
dash of pepper
juice of 1/2 lemon
Or mixed veggies of your choice!
Preheat oven to 425 degrees.
In a bowl, toss broccoli, cauliflower, greenbeans, garlic, olive oil, sea salt, pepper, rosemary, and basil until evenly coated.
Bake for 25 minutes on a cookie sheet or roasting pan, turning once or twice for even roasting.
Remove from oven and sprinkle with lemon juice.
Transfer to serving dish and serve while hot.
