Shallot & Sage Mashed Potatoes
These mashed potatoes are so flavorful it’s hard to believe they are dairy free!
A perfect compliment to any meal and worthy of a Holiday feast.
4 red potatoes
2 Tbs Earth Balance, butter substitute
1/2 cup rice or soy milk
sea salt, to taste
pepper, to taste
2 Tbs olive oil
1 shallot, sliced
2 Tbs fresh sage, chopped
In medium pot, cover potatoes with water about 2 inches.
Boil with skin on until soft.
Strain and dry off.
Meanwhile, saute shallots in olive oil until golden brown, add sage and continue to saute another 3 minutes, being careful not to burn.
While potatoes are still hot, turn flame to very low, mash potatoes with skin on, add Earth Balance and rice/soy milk.
Mash until creamy, add sea salt & pepper and shallot mixture.
Gently mix and serve hot.
