Simple Vegan Mushroom Gravy
2 Tbs sesame oil
1 onion, minced
6 cups mushrooms, sliced (I use button mushrooms or shiitake)
1 cup whole wheat flour
6 cups water
1/2 – 3/4 cup shoyu (soy sauce), adjust according to taste
In large skillet over medium heat, sauté onions and mushrooms in sesame oil until onions begin to brown.
Mix in flour and water and bring to a boil, stirring constantly to avoid lumps.
Simmer uncovered over medium heat for 20 minutes, stirring occasionally until thickened (you may need to add small amounts of water).
Add shoyu and cook for another 5 minutes.
