Vegan French Toast

For a fabulous breakfast or brunch this French Toast recipe is also perfect with a Cafe Mocha or Potatoes with Peppers!

INGREDIENTS

1/2 pkg organic firm tofu, drained
1 1/2 tsp cinnamon
2 Tbs brown rice syrup
1/2 cup rice or soy milk
1 tsp vanilla
1/2 tsp sea salt
vegetable oil
10 slices of your favorite whole grain bread
maple syrup
soy butter
fresh fruit (optional)

PREPARATION

Wrap tofu in a towel and place on a baking sheet with something heavy on top to press liquid out for 20 minutes.
In a large bowl blend all ingredients together until smooth. If mixture is too thick, add more milk.
Brush skillet with oil and heat over medium flame, dip bread into batter and brown on both sides (approx 4-5 minutes each side).
Serve hot with maple syrup, soy butter or Earth Balance, or fresh fruit.
