Fantastic Vegetable Stock

Every great soup starts with a fantastic vegetable stock. It doesn’t take very long to prepare and it makes all the difference in making some of the best soups ever.

I like to turn on the stove and workout for an hour and my stock is done.  See our featured soups or use as a base for a more flavorful rice.

Makes approximately 10 cups


12 cups water
3 carrots, coursely chopped
3 celery stalks, coursely chopped
1 onion, coursely chopped
4 scallions, coursely chopped, roots removed
2 cloves of garlic
2 bay leaves
1 cup any type of mushrooms
handful of parsley
1/2 lemon (optional)


In large stock pot, combine all ingredients together.
Simmer over medium flame, uncovered for one hour.
Strain and discard vegetables.
Stock can be stored in refrigerator for up to three days.
